Since I was once a waitress, please know I am definitely not insulting that profession! Never! In fact, those of us who were waiters or waitresses at one time I think over tip as a result of same!
I am actually referring to the small freight elevators popularly used 
in the larger estate homes in a bygone era. They would used to transport items (usually foodstuffs) between floors and generally would end up in a kitchen. However, dumbwaiters are returning! They are more advanced and do not use the pulley system but rather are automated and utilized for so much more than food!
Westchester is GREAT!
